The dried seeds of the pomegranate fruit are called anardana. The southern Himalayas are home to a wild pomegranate variety known as daru. This spice, which is made from dried pomegranate seeds, has a slightly tart, sweet, and fruity taste. In the Middle East, anardana is used in breads and pastries and in India to sour chutneys. Although the seeds are rough and sticky, they can be pulverized to add a strong taste or added to liquids together with other spices.
